Matcha Mille Crepe Cake

  1. Prepare the Crepe Batter: In a large bowl, sift together flour, matcha powder, sugar, and salt. In another bowl, whisk together eggs, milk, melted butter, and vanilla extract. Gradually add the wet ingredients to the dry ingredients, whisking until smooth. Cover the batter and refrigerate for at least 30 minutes.
  2. Cook the Crepes: Heat a non-stick skillet over medium heat and lightly grease with butter. Pour a small amount of batter (about 1/4 cup) into the skillet, swirling to create a thin, even layer. Cook for 1-2 minutes until the edges lift slightly, then flip and cook for another 30 seconds. Transfer the crepe to a plate and repeat until all the batter is used. Let the crepes cool completely.
  3. Make the Matcha Whipped Cream: In a mixing bowl, combine heavy whipping cream, sugar, matcha powder, and vanilla extract. Whip until soft peaks form.
  4. Assemble the Mille Crepe Cake: Place a crepe on a serving plate. Spread a thin layer of matcha whipped cream over it. Repeat, layering crepe and cream until all crepes are used, ending with a crepe on top. Gently press down to compact the layers.
