Sukiyaki Udon

Ingredients
- 1 pack of udon noodles
- 100g thinly sliced beef
- ½ onion
- 1 green onion
- ½ cup mushrooms
- 1 egg
- 1 tbsp oil
For the sukiyaki sauce
- 2 tbsp soy sauce
- 2 tbsp mirin
- 1 tbsp sugar
- ½ cup dashi (or water with ½ tsp dashi powder)
Instructions
- Prepare the udon: Boil the udon noodles according to package instructions. Drain and set aside.
- Cook the beef: Heat oil in a pan over medium heat. Add sliced beef and cook until lightly browned.
- Sauté the onions: Add sliced onions and cook until soft. Then add mushrooms (if using).
- Make the sauce: Pour in soy sauce, mirin, sugar, and dashi. Let it simmer for 2-3 minutes.
- Combine with udon: Add the cooked udon to the pan and mix well to absorb the flavors.
- Serve: Garnish with green onions and a raw or soft-boiled egg.
