The Best Spring Rolls

Originally known as "spring dish" (春饼), they were a seasonal delicacy consumed during the spring festival. Spring rolls have always been a stable in our household. Easy to pack, eat, and enjoy mess-free, these rolls have always managed to satisfy us to the fullest!

This recipe calls for:
  1. 1lb ground pork
  2. 1/4lb shrimp
  3. 1/2 finely chopped cabbage
  4. 4 eggs
  5. 15g dried shitake mushrooms
  6. 50g mung bean vermicelli
  7. 1/2 Chinese chives
  8. 3-4 green onions
  9. tbs ginger
  10. tbs garlic
  11. To taste: salt, cooking wine, soy sauce, and black pepper
  12. 1 pack of spring roll wrappers

Instructions:

  1. Soak mushrooms and vermicelli in warm water for 30-60 minutes, chop finely
  2. Peel and devein shrimp, then chop finely
  3. Lightly scramble the eggs, making sure to break them into small peices, season eggs with salt.
  4. Combine all the above ingredients into a large bowl, mix well.
  5. Prepare the deforsted wrappers, then spoon about 2tbsp of filling onto a wrapper
  6. Roll the paper from on corner to another, tucking in the sides as you go
  7. One nearly finished rolling, wet the trailing edge of the spring roll wrapper and seal shut
  8. Fry on medium to high heat for 2-3 minutes on both sides
  9. Let cool and enjoy!
